The Golden Rule: Add the burrata AFTER the pizza comes out of the oven. This is the single most important step. Baking the burrata will release its water and ruin its delicate texture. Adding it to the hot pizza straight from the oven gently softens it to perfection.

Step-by-Step Recipe

Ingredients:

  • 1 large pizza dough base (store-bought or homemade)
  • 1 pint mixed cherry tomatoes, halved
  • 1 ball (approx. 125g) of fresh burrata
  • A handful of fresh rocket (arugula)
  • Vegetarian Parmesan-style cheese, for shaving
  • Extra-virgin olive oil, salt, and pepper

For the Fresh Pesto:

  • 1 large bunch of fresh basil
  • 1 clove garlic
  • 1 tbsp lemon juice & 1 tsp Dijon mustard
  • 4 tbsp extra-virgin olive oil

Instructions:

  1. Preheat Oven: Place a pizza stone or an inverted baking sheet in your oven and preheat to its highest setting (240-250°C / 475-500°F).
  2. Make the Pesto: Combine all pesto ingredients in a small food processor or use a stick blender. Blitz until smooth. Season to taste.
  3. Prepare the Pizza: Stretch your dough on baking paper. Drizzle with olive oil. Top with the halved cherry tomatoes, salt, and pepper.
  4. Bake the Pizza: Carefully slide the pizza onto the preheated surface. Bake for 8-10 minutes, until the crust is golden.
  5. Assemble and Serve: Remove the pizza. Immediately place the burrata in the center and gently tear it open. Drizzle with pesto, top with rocket and Parmesan shavings, and finish with a final swirl of olive oil. Slice and serve immediately.
